I always use housekeepers cut, I find it the nicest 😋 I give it a good searing on a very hot pan, all over then wrap it in foil and pop in a casserole/Pyrex dish. Pop in some water, 2 onions, 2 sticks of celery, a carrot and 2 beef stock cubes. This will be the base for your gravy. I never time my beef 🤭 I just cook it at 200°C for about 20min
